My plan for tonight...

How to Roast Pumpkin Seeds
Rinse pumpkin seeds under cold water and pick out the pulp and strings. (This is easiest just after you've removed the seeds from the pumpkin, before the pulp has dried.)
Place the pumpkin seeds in a single layer on an oiled baking sheet, stirring to coat. If you prefer, omit the oil and coat with non-stick cooking spray.
Sprinkle with salt and bake at 325 degrees F until toasted, about 25 minutes, checking and stirring after 10 minutes.
Let cool and store in an air-tight container.
***We used cinnamon and sugar!***

Why Carve Pumpkins?

The story of the Jack o'Lantern comes from Irish folklore. Jack was a crafty farmer who tricked the Devil into climbing a tall tree. When the Devil reached the highest branch, Jack carved a large cross in the trunk, making it impossible for the Devil to climb down. In exchange for help getting out of the tree, the Devil promised never to tempt Jack with evil again. When Jack died, he was turned away from Heaven for his sins and turned away from Hell because of his trickery. Condemned to wander the Earth without rest, Jack carved out one of his turnips, took an ember from the devil, and used it for a lantern to light his way. He became known as "Jack of the Lantern."

New house...



Here are some pics of our new house (finally)! We are still getting settled in and the decorating plans are constantly turning in my head--but we are making Mitchell home! Hopefully the pics I post of the backyard in the summer will be a little more colorful-I am getting sick of SNOW AND COLD!

Refreshing....

My sister sent me this email a few days ago and I just got done watching this short video. Lately we have been VERY stressed out in our household and losing perspective on the important things...from new jobs to moving to sick kids, etc. we have lost sight of having fun and being happy. HAPPY BIRTHDAY OWEN!

I didn't have a chance to post yesterday, but the little man turned 2!!!!! He is just as naughty as ever and talks up a storm...
Today we had some prayers answered as we had him tested for cystic fibrosis and it came back NEGATIVE!!!! We are going to see a lung doctor on the 15th and hopefully get this asthma under control. We also close on our house that day, so you will probably be seeing another "CHANGE OF ADDRESS" notice in the mail from us soon! (the last time I am EVER sending one of those--our next move will be into the nursing home)....
I will post some pictures of the big boy's birthday party after Saturday!
